Rainy Saturday v2.0- Dark Chocolate and Pistachio Cookies

Still rainy, still lazy, cookies this time instead of brownies.  And I had Garden State playing in the background <3  Are you ready for this?  Joy the Baker comes up with some awesome cookie combinations.  These are a wonderful mix of sweet and salty, and I hope the girls enjoy them tomorrow!
Typical cookie ingredients, but throw in dark chocolate and pistachios.  Ohhh man, get excited.
Rough chop the pistachios.  Try not to eat all of them right now.
You know how to make cookie dough- cream butter and sugars, add the egg, add the vanilla.  Mix the dry ingredients over in a different bowl and add them to the wet.
Unofficial last step- drool over the cookie dough created and take a nibble for quality control purposes.
Space out 6 cookies on prepared cookie sheets, and sprinkle some sea salt over them (I didn't have the smoked sea salt she mentioned).
The cookies bake at only 300 degrees for 18 minutes, and they cook beautifully.
I mean just look at these.  The flecks of green pistachios, the dark chocolate, the slight salty bite they have on top...  these cookies are glorious.
These cookies are definitely special enough for an Oscars party. 
I love movies, I love events that celebrate movies, and I love excuses to bake things for events that honor movies.  It's all perfection.  Enjoy the Oscars everyone!  Go Silver Linings Playbook!  (Can you cheer for a movie like that?)

From Joy the Baker:
1/2 cup (1 stick)  unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups dark chocolate chips
1 cup shelled pistachios, coarsely chopped
smoked salt for topping

Place rack in the upper third of the oven and preheat oven to 300 degrees F.  Line two baking sheets with parchment paper and set aside.
In the bowl of an electric stand mixer fitted with a paddle attachment, beat butter and sugars together until pale and fluffy, about 4 minutes.   Add the egg and beat in for about 1 minute.  Add vanilla extract and beat to incorporate.
In a medium bowl, whisk together flour, baking soda, and salt.  Add the mixture all at once to the butter mixture.  Beat on low speed until just incorporated.  Finally mix in the chocolate chips and nuts.
Dollop or scoop cookie dough by the 2 tablespoonful onto prepared baking tins.  Leave about 2 inches of room between each cookie.  Sprinkle generously with smoked sea salt.
Bake cookies for 18 minutes, or until just golden brown.  Remove from the oven and allow to cool on the pan for 5 minutes before removing to a wire rack to cool completely.
