Cornflake Crunch Cookies

When you go to Seattle to visit and stay with your friends, you should probably bring something awesome as a thank you.  Cornflake crunch, meet chocolate chip cookies!  The base of these cookies is a bit saltier than usual, to accentuate the cornflake mixture in there and play with salty and sweet together.  These should do the trick, who would turn you away now?
These are very similar to the Momofuku Milk Bar cookies I posted, mostly because of the addition of the cornflake mixture that I had leftover from making those cookies months ago!  The cornflake mixture made more than those cookies needed at the time, so I froze the remainder, hoping this day would come.  And it did!  I adapted this recipe found on Food52 for the occasion.  Enjoy!
Ingredients:
1 1/2 cup flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 3/4 sticks butter (14 tablespoons), room temperature
1 cup brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cup chocolate chips
1 3/4 cup cornflake crunch
Preheat your oven to 375 degrees.  Cream the butter and sugars together until light and fluffy.  Add the egg and vanilla extract and mix until incorporated.  Add the flour, baking powder, salt, and baking soda and mix until just combined.
Add your chocolate chips and cornflake crunch and mix by hand until evenly distributed in the dough.
Line a baking sheet in foil or parchment and using a teaspoon cookie scoop, distribute 12 cookies on the sheet.
Freeze prepared baking sheets and dough for 20 minutes, or for 1 hour in the refrigerator- these cookies will spread like crazy otherwise!

Bake for 13-16 minutes at 375 degrees and remove immediately from the baking sheet to cool.
The exteriors of the cookie are crispy, and the insides aren't your typical chewy soft cookie, but you knew that when you added the cornflake crunch! 
There's salt, there's sweet, there's chocolate, there's the slight hint of cornflake behind the usual cookie dough.  These would absolutely be at home next to a glass of milk.
