Chicken Noodle Soup

I kiiiind of forgot a few ingredients at the store.  I'll try this recipe again with the correct everything, but for now, this was a bit of a twist on a simple chicken noodle soup.  Hearty, healthy, and just perfect to usher in the cooler evenings.  And super simple too!
Ingredients:
1 tablespoon olive oil
1 cup diced celery
1 cup diced carrots
1 cup diced onion
1/4 teaspoon parsley
1/4 teaspoon thyme
1/4 teaspoon turmeric (not pictured- last minute decision)
1 can (14 oz) fire-roasted tomatoes
1 cup shredded chicken
8 cups chicken broth
1 12 oz package of egg noodles
Salt and pepper

Heat the olive oil in a large soup pot over medium high heat.  Add the onions, carrots and celery and saute until soft, about 6-8 minutes.  Stir frequently to keep from burning or sticking.

Add the spices and stir, cooking another 30 seconds.  Add the tomatoes, chicken, and chicken broth.  When simmering, add the noodles and carefully stir.  Cook the noodles according to the packaging.  Done!
You'll get to see what I meant to make soon, but for now, this is a quick, easy, and delicious chicken noodle soup.  Enjoy!
