Pumpkin Pancakes

Everyone and their mother is posting pumpkin pancake recipes today.  So I'm just late to the party.
Sorry I'm not sorry!  I pretty much enjoyed pumpkin bread with maple syrup drizzled on top for breakfast this morning.  It was everything I wanted on a Sunday!
Ingredients:
1/2 cup all-purpose flour
1/4 cup whole wheat flour
1 1/4 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon pumpkin pie spice
1 tablespoon melted butter
3/4 cup pumpkin puree
1 egg
1 teaspoon vanilla extract
3/4 cup milk (whatever you have on hand)
Combine all of the dry ingredients (flour through pumpkin pie spice) in one bowl and mix.  Combine all of the rest of the ingredients, the wet ingredients in a separate bowl and mix.  Combine both and stir until combined.
Melt some butter in a skillet over medium heat.  Pour batter into the pan for whatever size pancakes you want!  Flip when the edges are starting to brown and look cooked through.
Serve with maple syrup like woah and enjoy October for what it is- an excuse to eat pumpkin things all the time!
