Asparagus, Brie and Prosciutto Toast

Dinner doesn't have to be complicated.  Throw some things on top of bread, and call it good.  It helps that toast is on trend right now, and you can get super creative with the toppings, beyond just butter and jam.
It's super easy, filling, and completely customizable.  To make the version I have here:

15 stalks asparagus, tossed in olive oil, salt and pepper
3 slices of bread (I used a sliced garlic loaf from Wegmans)
3oz brie cheese
3-4 slices prosciutto

Preheat your oven to 425.  Line two baking sheets with parchment paper.  Add the asparagus to one baking sheet with a little oil, salt and pepper, and roast.  Add a thin layer of brie cheese on top of each slice of bread.  About halfway through the cooking time of the asparagus (about 10 minutes, depending on the asparagus thickness), I added another baking sheet to the oven with the bread and brie on one side, and the prosciutto on the other (folded up a little to get extra crispy).  Once everything is done to your liking, or about another 10 minutes, remove from the oven and assemble! 

The sweet cheese perfectly offsets the salty prosciutto and I just love asparagus in any capacity.
