Quesadillas

Happy Cinco de Mayo!  One of the easiest ways to celebrate this (Americanized) holiday is to have some chips and salsa, or guacamole if you're feeling fancy!  (Or if you're really feeling fancy, try that coffee-tequila infused chocolate loaf cake!)
The second easiest way is to make some quesadillas.  I diced and roasted a sweet potato (oil, salt and pepper, 425 oven for 35 minutes).  Heat a medium pan over medium heat, spray with cooking spray and add a flour tortilla.  Sprinkle generously with your favorite melty cheese (cheddar for me!), and layer a handful of sweet potato, black beans, and dollop some salsa in there.  Another sprinkle of cheese, and another flour tortilla on top is all that's needed!  The hardest part is getting this thing to flip without cheese flying, but it's so worth it!
