CSA Week 8 - 3-Ingredient Spaghetti Squash Brunch

 Did you make the spaghetti squash yesterday??  Don't worry, you can still go and make it, I'll wait!
Ok, now did you realize that along with amazing dinner recipes, spaghetti squash is delicious at breakfast?  Add a little cheese and a poached egg, and you have a super healthy morning meal.  I'm not gonna lie, I had this for dinner a few nights too because it was so amazing.  And once you have the spaghetti squash roasted and in your fridge, all you need to do is poach the egg and heat up the spaghetti squash!
Spaghetti Squash Brunch
serves 1

Ingredients:
About 1 cup of spaghetti squash roasted, see here for a recipe
1 egg poached, or prepared as desired
1 oz. crumbled feta cheese
Salt and pepper, to taste

If you need to heat up the spaghetti squash, add it to a microwave-safe bowl and heat for a minute or two.  Crumble the feta cheese over the squash, and place the egg on top (poached, fried, or otherwise).  A little salt and pepper on top seals it.  Quick breakfast done!
