CSA Week 10 - 3-Ingredient Tomato Sauce

Today I have a super quick, and super easy recipe for you.  Use up the last of those ripe summer tomatoes in a delicious 3-ingredient sauce.  It's perfect on pasta, but Eric and I definitely used this to top fried eggs for breakfast, and on top of french bread as a quick bruschetta.  You really need this recipe in your life!
Ingredients:
1 pint cherry tomatoes, halved
5 cloves garlic, peeled and minced
2 tablespoons olive oil
Salt and pepper to taste

In a medium pan, heat the olive oil over medium heat.  Add the garlic and saute for a minute until fragrant, but not brown (stir frequently!).  Add the sliced tomatoes to the pan and cook for only 2-3 minutes.  You want them to be softening and becoming fragrant, but not losing their shape and turning to mush.

Use to top pasta, eggs, bread, or any other number of things!  Feel free to use large tomatoes, diced large (seeds removed), and definitely feel free to make this in a large quantity to keep in your fridge for leftovers!
